{"id":411,"date":"2020-02-19T17:30:33","date_gmt":"2020-02-19T16:30:33","guid":{"rendered":"http:\/\/irisae-conseil.net\/?p=411"},"modified":"2020-03-13T14:52:05","modified_gmt":"2020-03-13T13:52:05","slug":"food-safety-culture-la-nouveaute-des-referentiels-qualite-alimentaires","status":"publish","type":"post","link":"https:\/\/irisae-conseil.net\/index.php\/2020\/02\/19\/food-safety-culture-la-nouveaute-des-referentiels-qualite-alimentaires\/","title":{"rendered":"<b>Food Safety Culture =<\/b><br>la nouveaut\u00e9 des r\u00e9f\u00e9rentiels qualit\u00e9 alimentaires"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p><strong><em>D\u00e9j\u00e0 vu dans le BRC version 8 applicable depuis un an, et dans l\u2019IFS Broker version 3 de l\u2019\u00e9t\u00e9 dernier, la notion de Food Safety and Quality Culture est la nouveaut\u00e9 des r\u00e9f\u00e9rentiels qualit\u00e9 de l\u2019industrie alimentaire<\/em><\/strong><\/p>\n<p>&nbsp;<\/p>\n<p><strong>Origine&nbsp;: le GFSI<\/strong><\/p>\n<p>Le Global Food Safety Initiative \u00e9tablit des exigences de s\u00e9curit\u00e9 des aliments, et propose aux r\u00e9f\u00e9rentiels qui les int\u00e8grent de b\u00e9n\u00e9ficier d\u2019une reconnaissance mutuelle (cas du BRC, IFS, FSSC22000, SQF, \u2026).<\/p>\n<p>Parmi les derni\u00e8res exigences GFSI, la notion de <strong>culture de la qualit\u00e9 et de la s\u00e9curit\u00e9 des aliments<\/strong> est apparue (Position Paper du 4\/11\/18). Elle est d\u00e9finie de la fa\u00e7on suivante&nbsp;: <em>Les valeurs, croyances et normes communes qui affectent l\u2019esprit et le comportement vis-\u00e0-vis de la s\u00e9curit\u00e9 des aliments au sein d\u2019une organisation<\/em>. La <strong>FSC<\/strong> (Food Safety Culture) s\u2019articule autour de 5 piliers (Vision de l\u2019entreprise, Acteurs, Coh\u00e9rence, Adaptabilit\u00e9, Sensibilisation aux risques et dangers).<\/p>\n<p>&nbsp;<\/p>\n<p><strong>C\u2019est quoi l\u2019id\u00e9e&nbsp;?<\/strong><\/p>\n<p>Il y avait d\u00e9j\u00e0 des \u00e9l\u00e9ments allant dans ce sens dans les pr\u00e9c\u00e9dentes versions du BRC et de l\u2019IFS (notamment le <strong>KO sur la responsabilit\u00e9 de la direction<\/strong>). Dans la version 8 du BRC, ce point a \u00e9t\u00e9 approfondi, avec 3 exigences. Dans l\u2019IFS Food (draft V7), le sujet est abord\u00e9 dans la politique d\u2019entreprise et dans la revue de direction.<\/p>\n<p>L\u2019id\u00e9e est que la direction travaille \u00e0 la diffusion et l\u2019animation d\u2019une culture d\u2019entreprise, afin que chacun soit sensibilis\u00e9 et acteur de la qualit\u00e9 et la s\u00e9curit\u00e9 des aliments. La direction doit s\u2019assurer de la clart\u00e9 du discours et la coh\u00e9rence avec les moyens mis en \u0153uvre, le management doit s\u2019assurer de la compr\u00e9hension et de l\u2019application de cette orientation sur le terrain. <strong>Tous les membres de l\u2019entreprise deviennent donc concern\u00e9s et acteurs de l\u2019am\u00e9lioration continue<\/strong> (donc force de proposition).<\/p>\n<p>Ce projet s\u2018inscrit donc dans la dur\u00e9e, une dynamique doit \u00eatre initi\u00e9e.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Le lien avec la RSE<\/strong><\/p>\n<p>S\u2019attaquer \u00e0 la culture d\u2019entreprise est un <strong>travail transversal et sur le long terme<\/strong>. Il est dommage de le limiter aux questions de la qualit\u00e9 et s\u00e9curit\u00e9 des aliments, d\u2019autant plus que les questions d\u2019\u00e9thique, d\u2019\u00e9cologie, d\u2019\u00e9quit\u00e9 soci\u00e9tale font partie des pr\u00e9occupations d\u2019une partie de la population.<br \/>\nSi la direction est d\u00e9j\u00e0 sensible au d\u00e9veloppement durable, ce peut donc \u00eatre l\u2019<strong>opportunit\u00e9 de se lancer dans une d\u00e9marche RSE<\/strong>. La politique d\u2019entreprise int\u00e9grera alors les th\u00e8mes consid\u00e9r\u00e9s comme prioritaires (identifi\u00e9s par l\u2019analyse des besoins \/ attentes des parties prenantes puis par une analyse de mat\u00e9rialit\u00e9), dont la FSC.
