Premiers retours d\u2019exp\u00e9rience, et lien avec une d\u00e9marche RSE.<\/em><\/strong><\/em><\/strong><\/p>\n\n\n\n<div style=\"height:41px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>D\u00e9finition<\/strong><\/p>\n\n\n\n<p>L\u2019<a href=\"https:\/\/irisae-conseil.net\/index.php\/2020\/11\/16\/referentiel-ifs-food-nouvelle-version\/\">IFS Food v7<\/a> d\u00e9finit la Food Safety Culture (<strong>culture de la s\u00e9curit\u00e9 des aliments<\/strong>) comme suit\u00a0: \u00ab\u00a0Valeurs, convictions et r\u00e9f\u00e9rentiels partag\u00e9s qui ont un effet sur l\u2019\u00e9tat d\u2019esprit et le comportement de toute la soci\u00e9t\u00e9 en mati\u00e8re de s\u00e9curit\u00e9 des aliments.<\/p>\n\n\n\n<p>Les \u00e9l\u00e9ments de cette culture sont les \u00e9l\u00e9ments du management de la s\u00e9curit\u00e9 des aliments que la direction utilise pour v\u00e9hiculer cette culture.&nbsp;\u00bb<\/p>\n\n\n\n<div style=\"height:40px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Concr\u00e8tement&nbsp;?<\/strong><\/p>\n\n\n\n<p>Cette d\u00e9finition est compl\u00e9t\u00e9e par quelques d\u00e9tails\u00a0: \u00ab\u00a0Cela doit inclure, au moins :<\/p>\n\n\n\n<p>\u2022 La communication sur les responsabilit\u00e9s et la politique de s\u00e9curit\u00e9 des aliments<\/p>\n\n\n\n<p>\u2022 La formation<\/p>\n\n\n\n<p>\u2022 Le retour\/partage des employ\u00e9s sur des probl\u00e8mes de s\u00e9curit\u00e9 des aliments<\/p>\n\n\n\n<p>\u2022 La mesure de la performance.&nbsp;\u00bb<\/p>\n\n\n\n<p>Donc, l\u2019id\u00e9e est bien de <strong>favoriser une d\u00e9marche qualit\u00e9 proactive<\/strong>, identifiant le r\u00f4le de chacun, les pistes de progr\u00e8s et les points de fragilit\u00e9 dans l\u2019organisation, afin d\u2019agir avant que des probl\u00e8mes de s\u00e9curit\u00e9 des aliments ne se produisent. Et <strong>tous les employ\u00e9s doivent \u00eatre acteurs<\/strong>, et sensibilis\u00e9s \u00e0 travers une culture d\u2019entreprise. Mener une d\u00e9marche qualit\u00e9 r\u00e9active, simplement en mettant en place des am\u00e9liorations au gr\u00e9 des \u00e9volutions r\u00e9glementaires ou des r\u00e9f\u00e9rentiels qualit\u00e9 n\u2019est plus suffisant.<\/p>\n\n\n\n<p>De surcro\u00eet, comme l\u2019IFS Food v7 impose la r\u00e9alisation d\u2019un audit inopin\u00e9 tous les 3 ans, <strong>les industriels de l\u2019alimentaire sont pouss\u00e9s \u00e0 \u00eatre constamment pr\u00e9par\u00e9s<\/strong> et en conformit\u00e9 avec le r\u00e9f\u00e9rentiel.<\/p>\n\n\n\n<p>Ce projet s\u2018inscrit donc dans la dur\u00e9e, <strong>une dynamique doit \u00eatre initi\u00e9e<\/strong>.<\/p>\n\n\n\n<div style=\"height:41px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Comment s&rsquo;y prendre<\/strong><\/p>\n\n\n\n<p><strong>L\u2019impulsion doit \u00eatre donn\u00e9e par la direction<\/strong>. Le mieux est qu\u2019elle s\u2019adresse directement aux employ\u00e9s, afin de leur expliquer l\u2019int\u00e9r\u00eat de la d\u00e9marche, <strong>le r\u00f4le de chacun<\/strong> et comment cela va se concr\u00e9tiser. La bonne compr\u00e9hension de la coh\u00e9rence des diff\u00e9rents \u00e9l\u00e9ments mis en place est essentielle pour que chacun comprenne bien son r\u00f4le.<\/p>\n\n\n\n<p>Puis des <strong>outils <\/strong>permettant les \u00e9changes et remont\u00e9es de tous les employ\u00e9s (sur des anomalies constat\u00e9es, donnant lieu \u00e0 des non-conformit\u00e9s ou non, des id\u00e9es d\u2019am\u00e9lioration, &#8230;) doivent \u00eatre d\u00e9ploy\u00e9s et expliqu\u00e9s \u00e0 leurs futurs utilisateurs. Ces outils peuvent \u00eatre des temps d\u2019\u00e9changes avec le personnel, ou l\u2019enregistrement direct des remont\u00e9es que chacun fait \u00e0 son responsable, ainsi qu\u2019un <strong>affichage d\u2019indicateurs<\/strong> utiles pour percevoir l\u2019impact de la d\u00e9marche. Enfin un <strong>plan d\u2019action<\/strong> doit \u00eatre mis en place chaque ann\u00e9e pour d\u00e9finir quelles suites sont donn\u00e9es \u00e0 la d\u00e9marche, par exemple <strong>impliquer le personnel administratif<\/strong> ce qui est souvent un point faible.<\/p>\n\n\n\n<p>Puis, un point annuel doit \u00eatre fait en <strong>revue de direction<\/strong>, pour mesurer l\u2019avancement des projets et d\u00e9finir les orientations \u00e0 venir.<\/p>\n\n\n\n<div style=\"height:40px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Le lien avec la RSE<\/strong><\/p>\n\n\n\n<p>S\u2019attaquer \u00e0 la culture d\u2019entreprise est un travail transversal et sur le long terme. Il est dommage de le limiter aux questions de la qualit\u00e9 et s\u00e9curit\u00e9 des aliments, d\u2019autant plus que les <strong>questions d\u2019\u00e9thique, d\u2019\u00e9cologie, d\u2019\u00e9quit\u00e9 soci\u00e9tale font partie des pr\u00e9occupations d\u2019une partie de la population<\/strong>.<br>Si la <strong>direction est d\u00e9j\u00e0 sensible au d\u00e9veloppement durable<\/strong>, ce peut donc \u00eatre l\u2019<strong>opportunit\u00e9 de se lancer dans une d\u00e9marche RSE<\/strong>.
